Meet Chef Carlos

Carlos' story begins thousands of miles from the grill he stands behind today.

Born in Uruguay, Carlos was just six years old when his family came to the United States in search of a better life. Like so many immigrant families, they arrived with big dreams, limited resources, and an unwavering belief that hard work could create opportunity.

His greatest inspiration has always been his mother.

As a single parent determined to give her child every chance to succeed, she worked three jobs to provide for the family. Watching her sacrifice, determination, and resilience shaped the values Carlos still lives by today—integrity, humility, perseverance, and gratitude.

Those lessons carried him through school and eventually to the University of Rochester, where he earned his degree before beginning a career with ExxonMobil.

For the next 35 years, Carlos built a successful career in the energy industry, earning the respect of colleagues through leadership, discipline, and an unwavering work ethic. At just 58 years old, he retired after an accomplished career, ready to begin the next chapter of his life.

But long before boardrooms and business meetings, there was always another passion.

Cooking.

Growing up in a Uruguayan family, food wasn't simply about eating—it was about bringing people together. Family gatherings centered around the asado, where fire, patience, and quality ingredients created unforgettable meals and lifelong memories. Carlos learned that great food isn't rushed; it's crafted with care, shared generously, and enjoyed with the people you love.

Today, MeatMaster Chef Carlos is the culmination of that lifelong journey.

Blending authentic Uruguayan grilling traditions with the flavors and opportunities he found in America, Carlos shares recipes, techniques, and stories that celebrate family, heritage, and exceptional food. Whether he's preparing a perfectly grilled steak, a traditional chimichurri, or teaching others the art of live-fire cooking, his mission remains simple:
